Fritters also known as pakoras are a popular snack enjoyed across India, whether they are savory or sweet. One of the defining features of a great fritter is its crispy exterior. Achieving that perfect crispiness can sometimes be tricky, but with a few simple tricks, you can enhance the texture of your fritters. Here are four ways to improve the crispiness of fritters:

Use cold ingredients

Using cold ingredients can make a big difference in the texture of your fritters. Cold batter and ingredients help prevent the fritters from absorbing too much oil while frying, resulting in a crispier exterior. Place the batter in the fridge for 15-30 minutes before frying. You can also use cold water or cold milk in your batter mix to help keep the temperature low. This ensures the fritters cook quickly on the outside while remaining light and crispy.

Add cornstarch or rice flour

To improve the crispiness of fritters, consider adding cornstarch or rice flour to your batter. These ingredients create a light, crispy coating by absorbing less oil and creating a crispier texture once fried. Replace part of the regular flour in your batter with cornstarch or rice flour (about 1-2 tablespoons for every cup of flour). This will give your fritters a golden, crunchy crust that holds up well after frying.

Fry at the right temperature

Frying fritters at the correct oil temperature is crucial for achieving that perfect crispiness. If the oil is too hot, the fritters will burn on the outside while remaining raw inside. If the oil is too cool, they Will absorb too much oil and become greasy. Heat the oil to around 1750C. You can test the temperature by dropping a small amount of batter into the oil, if it sizzles and rises to the surface quickly, the oil is ready.
