Hoppin' John (Southern USA)

This hearty dish prepared with black-eyed peas, rice, and smoked meat is a staple in Southern United States' New Year celebrations. Black-eyed peas symbolize coins and prosperity, while greens, often served as a side, represent money. To prepare Hoppin' John, saute diced onion, bell pepper, and garlic in olive oil until softened. Add smoked meat (such as ham hocks or sausage) and cook until fragrant. Soak black-eyed peas; add to pot along with chicken broth and bay leaves. Simmer until the peas are tender. Serve over rice with a side of cornbread and greens for a comforting and symbolic meal.

Osechi Ryori (Japan)

Osechi Ryori is a collection of beautifully arranged dishes in lacquered boxes, each representing good fortune. The most popular are sweet rolled omelet, known as datemaki, simmered vegetables, and fish cakes (kamaboko). For making datemaki, beat eggs, sugar, and mashed fish paste; the batter should be runny. Pour the mix into a baking pan and when set, roll the cook omelet tightly, in a bamboo mat to make a log-like shape and let it cool. Cut into rounds and serve as a dessert which is savory, to savor a celebratory dish.

Twelve Grapes (Spain)

In Spain, one must consume twelve grapes when it strikes midnight, believed that this will bring luck into the new year for every month to come. This non-cooked dessert has merely a small preparation to prepare, ready to be consumed, for example; Wash and dry bunch grapes, making sure to have at least twelve per serving. Serve them in little bowls or on toothpicks to make them look elegant. This is a great dish for the holidays: it is quick to make and has lots of charm.

Sauerkraut and Pork (Germany)

In Germany, pork means progress and sauerkraut represents blessings. This combination is a requirement for New Year's Day, as it supposedly brings good luck. Sprinkle salt and pepper onto pork chops and sear them in a skillet to brown. Take the pork out, and saute the onions and apples in the same pan. Add the sauerkraut, caraway seeds, and chicken stock, and nestle the pork chops into the mixture. Cover and let it simmer until the pork is tender. Serve hot over mashed potatoes.

Lentil Stew (Italy)

In Italy, lentils are a good luck food because of its coin-like shape. A hearty New Year's dish often consists of cotechino, a savory sausage, served with lentils. Saute chopped onions, carrots, and celery in olive oil until tender. Add lentils, vegetable stock, and canned tomatoes. Cook until the lentils are tender. Cook or grill slices of cotechino sausage and serve over the top of the lentil stew for a traditional Italian meal.

Vasilopita (Greece)

This Greek New Year's cake is not only delicious but also carries a special tradition. A coin is hidden in the cake, and the person who finds it is said to have good luck for the year. Cream butter and sugar, then mix in eggs, flour, and baking powder. Add orange zest and vanilla extract for flavor. Pour the batter into a greased cake pan, insert a wrapped coin, and bake till golden. When it is done, allow it to cool, dust with powdered sugar at room temperature, and slice it to share the luck.

Pavlova (Australia and New Zealand)

Pavlova, a light meringue-based dessert, is a favorite in Australia and New Zealand's summer New Year celebrations. Its crispy outer shell and soft center are often associated with fresh fruits such as berries and kiwis. Whisk in egg whites with sugar to stiff peaks, then add cornstarch and vinegar gently folding into the mixture. Shape this mixture into a circular mound on a baking sheet and bake at a very low temperature until crispy, then set aside to cool. Top with whipped cream and an assortment of fresh fruits.
